Building a fire kitchen in 144 square feet

A hundred and forty-four square feet is not a lot of kitchen. It is roughly the size of a small bedroom, and it has to hold a fire grill, a service line, storage, packing, and people.
The constraint drove almost every decision we made.
Judgment happens upstream
The central idea is simple. Anything that requires a decision happens before service, somewhere else.
Buns are baked in the morning. Sauces are built in batches. Patties are portioned to weight. Braises are done long before anyone orders one.
By the time an order lands, the line is not deciding anything. It is executing to time, temperature and count. That is what lets a small space produce a full menu quickly, and it is also the honest answer to why the burger is the same on a quiet Tuesday as it is at 9pm on a Saturday.
The menu got shorter
We started with a much longer menu. More of everything.
Cutting it was the best decision we made. Every item on a small line competes for the same fire, the same hands and the same seconds. A tight menu is not a compromise forced by the space, it is what makes the space work, and it is what most of the outlets we admire on this row have in common.
Five burgers. Two molten bombs. Four loaded fries. Wings, shakes, two drinks, one dessert.
The fire stays visible
We could have put the grill at the back. Plenty of counters do.
We put it at the front, because it is the most honest thing we have. You can see the char happen. You can see how thick the patty is before it goes on. In a format where you are handing food across a counter to someone who is standing on the street, that visibility does more than any sign.
What the constraint taught us
A small kitchen forces you to decide what actually matters. Every choice above follows from that, and the constraint has made the food better rather than worse.
